How to make easy sugar cookies

Ingredients
1 cup butter, room temperature
2/3 cup + 3 tablespoons granulated sugar
2 cups + 1 tablespoon all-purpose flour (spooned and leveled)
1 teaspoon vanilla (optional, but recommended)
Rainbow sprinkles or nonpareils (optional, but recommended)
Instructions
1. Preheat oven to 325°F. Line 2 large baking sheets with parchment paper.
2. Beat together butter and 2/3 cup sugar until combined.
3. Add flour and vanilla; blend well.
4. Dough should be soft and smooth. Knead if crumbly.
5. Scoop 1-inch balls and roll smooth.
6. Roll in remaining sugar and place 2 inches apart.
7. Flatten and add sprinkles.
8. Bake 14–16 minutes until lightly golden.
9. Rest 10–15 minutes, then enjoy!
